If there is one appetizer that never goes out of style, it’s the cheese ball. (Remember my large bald eagle cheese ball?) And with the Fourth of July right around the corner, I came up with something I think is even better–Bald Eagle Cheese Ball Bites. They’re festive, easy to serve, and guaranteed to get guests talking. If you’re willing to get a little creative, these patriotic mini cheese balls can become the kind of party food people remember long after the fireworks are over.

I’ve made my fair share of cheese balls over the years, and along the way I’ve learned that the difference between a cute idea and a successful appetizer often comes down to a few simple techniques. Use a Cookie Scoop

Mini cheese balls look most professional when they’re all the same size. A small cookie scoop takes the guesswork out of portioning and ensures every cheese ball is uniform.

As a bonus, equal-sized portions also soften at the same rate, making them easier to serve.

Make Them Ahead

Mini cheese balls are a great make-ahead appetizer, especially for holidays and parties. In fact, I often think the cheese mixture tastes even better after sitting overnight because the flavors have more time to develop.

You can prepare the cheese mixture one to two days in advance and store it covered in the refrigerator. You can even portion and shape the mini cheese balls ahead of time. However, if you’re serving them on crackers, wait until shortly before serving to assemble them. The moisture from the cheese balls will soften the crackers over time, and you’ll lose that satisfying crunch.

People Remember Experiences, Not Recipes

The reason I love mini cheese balls isn’t because they’re particularly fancy. It’s because they’re fun.

Bald Eagle Cheese Ball Bites

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 8 ounces and combination of sharp cheese, shredded
  • 1 (1-ounce) packet ranch dressing mix
  • 28 round crackers
  • 1/2 cup pecans, toasted and chopped
  • 2 ounces parmesan or pecorino cheese, finely shredded
  • 28 cashews
  • 56 peppercorns


Instructions

  1. Combine cream cheese, sharp cheese and ranch dressing mix. I find it’s easiest to do this in a food processor.
  2. Use tablespoon or small cookie scoop to scoop cheese ball mixture onto round cracker.
  3. Press pecan pieces in single layer around base of cheese ball.
  4. Press parmesan or pecorino on top of cheese ball.
  5. Insert one cashew halfway into center of cheese ball so it resembles a beak.
  6. Insert one peppercorn on either side of cashew so they resemble eyes.
