Easy Quick-Pickled Red Onions

Quick pickled red onions add a bright, tangy crunch to sandwiches, tacos, salads, burgers, and more. This recipe can be ready in as little as 30 minutes with a simple vinegar brine. They’re ready to use as soon as they cool.

Ingredients

Scale
  • 1 red onion, peeled
  • 1/2 cup water
  • 1/2 cup apple cider vinegar or red wine vinegar
  • 1 Tablespoon sweetener of choice (sugar, honey, agave nectar, etc.)
  • 1 teaspoon salt
  • Optional: 1/2 teaspoon red pepper flakes, black peppercorns, and/or mustard seeds

Instructions

  1. Slice the red onion as thin as you can. I recommend using a mandoline.
  2. Stuff the red onions into your container of choice. I like to use a mason jar.
  3. In a pourable large measuring glass, microwave water to the point that it’s nearly boiling, or about 1 1/2 minutes (careful it’s hot!).
  4. Stir in vinegar, sweetener, salt, and optional seasonings.
  5. Pour pickling mixture over sliced onions. Make sure they are immersed in the liquid.
  6. Refrigerate for at least 1 hour prior to serving.

Notes

  • These will last in the refrigerator for up to 3 weeks.
  • The thickness of your onion slices determines how fast they pickle. Paper-thin slices will be ready to eat in as little as 15 to 20 minutes, but thicker slices are ready after a few hours.
