Easy 5-minute, no-bake nut-free energy bites made with tahini, oats, flaxseed, and mini chocolate chips. A school-safe, allergen-friendly snack that tastes just like chocolate chip cookie dough!

Ingredients

  • 3/4 cup tahini (180 grams)
  • 1/4 cup honey (85 grams)
  • 1 Tablespoon vanilla extract (15 grams)
  • 3/4 cup quick-cooking oats (67 grams)
  • 1/2 cup old-fashioned rolled oats (45 grams)
  • 1/2 cup ground flaxseed meal (52 grams)
  • 1/4 cup mini chocolate chips (semi-sweet or unsweetened) (45 grams)
  • 1/4 teaspoon kosher salt (1.5 grams)

Instructions

  1. Mix Wet Ingredients: In large mixing bowl, whisk together tahini, honey, and vanilla extract until smooth.
  2. Add Dry Ingredients: Stir in quick oats, rolled oats, ground flaxseed, mini chocolate chips, and kosher salt. Mix until a cohesive dough forms.
  3. Form Balls: Scoop roughly 2 Tablespoons (about 22 grams) of the mixture into your hands and roll firmly into a ball. Repeat with remaining mixture to make about 16 bites.
  4. Store: Transfer bites to an airtight container. Refrigerate for at least 30 minutes to firm up. Store in the fridge for up to 2 weeks or freeze for up to 3 months.

  • Make it Vegan: Swap the honey for an equal amount of pure maple syrup.
