Ingredients
- 2 lb boneless, skinless chicken breasts
- 48 oz low sodium chicken broth
- 1 (48 oz) jar Great Northern Beans
- 1 (16 oz) jar of lower sodium medium salsa
- 1 tbsp cumin
- 1 tbsp garlic powder
- 8 oz shredded pepper jack cheese
Instructions
For the Chicken
- Preheat oven to 350 degrees Fahrenheit
- Spray a baking pan with non-stick cooking spray and place chicken in pan
- Bake chicken breasts until they reach an internal temperature of 155F, approximately 25 minutes.
- Remove chicken breasts from oven and let them rest in tin foil for about 10 minutes
- Once chicken is cool enough to touch, shred the chicken with forks or chop the chicken up into small chunks. Then set the chicken aside.
If Making Chili on the Stove Top
- Add chicken broth to 6-quart pot and set stove temperature to medium heat

- Turn stovetop temperature to low heat and simmer for 30 minutes

- Once the broth starts to boil (about 1 hour), drain Great Northern Beans in colander and add beans to the broth

- Turn crock pot temperature to low heat and let simmer for at least 1 hour (up to 4 hours)
- Add pepper jack cheese
- Stir until cheese has melted and serve
