If you don’t live in Indianapolis, you can find spaetzle in the ethnic section of many local grocery stores or online.
Bacon and cheese spaetzle
Ingredients
- 4 slices bacon
- 1 yellow onion, diced (about 8 ounces)
- 1Â (9-ounce) boxÂ
spatezle , cooked (about 600 grams cookedÂspatezle ) - 8 ounces sauerkraut, drained
- 4 ounces gruyere cheese, grated
- 4 ouncesÂ
cheese, gratedemmantaler - 1/4 teaspoon pepper
- 1/4 teaspoon salt
- Parsley for garnish
Directions
- Heat a skillet to medium-low heat, and cook the bacon until it is crispy, or about 8 minutes total (4 minutes per side).
- Remove bacon and place on
paper -towel lined plate. Cut into thin strips. - Drain all but 2 Tablespoons of bacon grease from the skillet.
- Add onion to skillet and saute until translucent and caramelized. Remove from heat.
- Combine bacon, onion, spatezle, sauerkraut, 2 ounces of gruyere cheese, 2 ounces ofÂ
 cheese, pepper, and salt.emmantaler - Pour mixture into prepared 8×8-inch casserole dish.
- Top with remaining cheese and place under broiler for 3-4 minutes or until bubbly.
- Serve warm with parsley sprinkled on top.
