One thing I have learned about my audience over the years is that you all love cheese balls—especially themed ones! Some of my highest-viewed Halloween recipes to date are my Bald Eagle Cheese Ball and my Amputated Hand Cheese Ball.
Cheese balls might sound a little retro or outdated at first glance, but that exact nostalgic charm is what makes them so trendy and appealing today. Plus, when was the last time a cheese ball didn’t get completely devoured at a party? It’s almost always the first appetizer to disappear!
That’s why I’m so excited to share my newest Halloween appetizer creation: a Halloween Eyeball Cheese Ball!
Unlike traditional savory cheese balls, this recipe leans a bit sweeter with a creamy goat cheese base paired with tangy cream cheese, a bite of blue cheese, dried cranberries, and sweet red pepper jelly. To make it extra creepy, it’s decorated with a kiwi slice and a giant blueberry pupil, then injected with “blood” using a food-grade syringe filled with red pepper jelly!
Why You’ll Love This Sweet & Savory Halloween Cheese Ball
- The Ultimate Crowd-Pleaser: Combines cream cheese, goat cheese, red pepper jelly, and toasted pecans for a perfectly balanced flavor profile.
- Eye-Catching Visuals: Most cheese balls are rolled completely in toppings, but putting the pecan crust on the bottom ensures the clear shape of the eyeball stands out on your platter.
- Interactive & Fun: The edible “bloody” syringe lets guests squirt extra red pepper jelly over the eyeball right before digging in!
Cheese Ratio & Key Ingredient Notes
The Cheese Base Breakdown
To get a rich, tangy flavor while ensuring the cheese ball keeps its structure on a platter, the cheese ratio is critical:
- 8 oz. Goat Cheese: Gives the base its vibrant, tangy flavor.
- 4 oz. Cream Cheese: Provides necessary stability and firm structure so the ball holds its round shape.
- 1 oz. Blue Cheese: Adds a funky, complex depth of flavor.
Substitutions & Swaps:
- No Blue Cheese? If blue cheese isn’t your favorite, feel free to omit it or substitute it with shredded sharp white cheddar.
- No Red Pepper Jelly? If you want a sweet heat kick without red pepper jelly in the cheese mixture, swap in 1–2 tablespoons of hot honey.
How to Make the “Bloody” Syringe

To get the full creepy effect, use a food-grade syringe to drizzle “blood” across the eyeball surface.
- Get Food-Safe Syringes: Use food syringes like these on Amazon.
- Thin the Jelly: Red pepper jelly straight from the jar is too thick to draw into a syringe. Mix 3 tablespoons of red pepper jelly with 1 to 2 tablespoons of hot water in a small bowl until smooth. You want it loose enough to squeeze easily through the nozzle, but thick enough to cling nicely to the cheese.
Make-Ahead, Storage & Party Serving Tips
Can I Make This Ahead of Time?
Yes! You can assemble the cheese ball up to 2 days in advance. Wrap it tightly in plastic wrap and store it in the refrigerator. Fill the syringe with the diluted red pepper jelly and store it separately in the fridge. Assemble the topping crust, kiwi slice, blueberry pupil, and jelly drizzles right before serving.
How Long Can It Stay Out at Room Temperature?
Because it contains soft dairy products (goat cheese and cream cheese), this cheese ball can safely stay out at room temperature for up to 2 hours. If you’re hosting a longer party, keep it chilled until guests arrive, or build a smaller backup ball to swap out halfway through the event.
What Should I Serve with an Eyeball Cheese Ball?
- Crackers: Butter crackers (like Ritz), pita chips, or sturdy water crackers.
- Fruit: Sliced green apples or pear slices complement the goat cheese and cranberry flavors nicely.
- Pretzels: Pretzel twists or pretzel chips add a nice salty crunch.
What to Do with Leftovers?
Store any leftover cheese ball in an airtight container in the refrigerator for up to 3–4 days. Leftover cheese mixture makes an incredible spread on breakfast bagels, toasted crostini, or turkey sandwiches!
I will share this recipe the morning of Tuesday, October 27 at 10 a.m. on FOX59’s IndyNow!

- Total Time1 hour 35 minutes
- Yield16 servings 1x
Ingredients
For the Cheese Ball Mixture
- 8 oz. goat cheese, room temperature
- 4 oz. cream cheese, room temperature
- 1 oz. blue cheese, crumbled

- 1 kiwi slice
- 1 giant blueberry
- Assorted crackers for serving
Instructions
For the cheese ball mixture
- Combine the goat cheese, cream cheese, blue cheese, cranberries and red pepper jelly in a mixing bowl and stir until well blended.
- Cover the bowl and refrigerate for at least 15 minutes.
- Place a large sheet of plastic wrap on your work surface and scrape the cheese ball mixture into the center.
- Bring the four corners of the plastic wrap together and twist to shape the mixture into a rough ball.
- Refrigerate for at least 1 hour.
For the syringe
- Stir the red pepper jelly with 1 tablespoon hot water, adding more as needed until it’s loose enough to squeeze through the syringe but still thick enough to cling.
- Fill the food syringe with the pepper jelly blood.
For serving
- When ready to serve, spread the pecans, cranberries and parsley in a cheese ball-sized circle on a serving platter.
- Unwrap the cheese ball and place it on top of the toppings.
- Place the kiwi slice on top of the cheese ball and the blueberry on top of the kiwi. Dab a little red pepper jelly or cheese ball mixture on the blueberry if needed to hold it in place.
- Drizzle thin lines of jelly from the syringe over the eyeball to make it look bloodshot.
- Set the syringe to the side of the cheese ball so guests can add more pepper jelly if desired.
- Serve with crackers.
Notes
- No blue cheese? Leave it out.
- No red pepper jelly? Replace the jelly in the mixture with 1 to 2 tablespoons hot honey.
- To toast pecans: bake on a sheet pan at 350°F for 6 to 8 minutes, until fragrant.
